Budgets are targets that had some sense of reason at the time that they are made. setting a budget as a target gives you two things. it allows you to determine if that amount is acceptible in your business and it gives you an idea of how you are doing compared to that amount. it also gives you a warning that you are in trouble on one item and may need to make adjustments on another. you throw away much out dated stock, then you may have to keep those menus a little longer.
