Booking a flight to canada for christmas, is it best to book now or get a late cheap deal??

Do flights work the same when they are long distance, say to the states or canada, the same as they would to benidorm, with the possibility of booking a late deal and getting a bargain???

You may get a late deal but do you take the chance of not getting a seat. christmas is a busy time with eone trying to get home.
