Offshore fishing advice plz

We are going on holiday to hastings, and my son wants to try his hand at offshore fishing, i have no knowledge as to what type of bait do you use, so any advice would be helpful on this subject

Phone the local tackle shops and get a nice
skippers name, talk to him. bait and gear will be provided on a nice
boat, tight lines.
